Can’t update my iMac running with High Sierra 10.13.6 to Big Sure...
Any other Mac OS could be installed ? I need to upgrade Office 365 and MacOS needs to be at 10.14 or later.

In my opinion, this is a total non sense and it is definitely unacceptable. I have put 24 Go of Ram and replace the hard drive for 1 Tb SSD over years. The computer is still fast as **** and it never fails.
Another Apple solution in order to transform a very good and fully operational computer into an obsolete device.

Nope. That machine has gone as far as it can.
Besides LibreOffice there is SoftMaker FreeOffice 2018. Both are good alternatives to MS Office and are compatible with Office formats.
Sorry, a mid-2011 iMac cannot be upgraded beyond 10.13.6.
It's 10 years old. The graphics in it don't meet the minimum requirements to run 10.14 or higher.
It had a good life. It's time to move on.
So, what task can your computer not do, that it did previously?
Have you thought of using something other than Office 365?
There is a free LibreOffice that is a good alternative.
