how do I take the header off the third page
How do I remove the header from the third page only of my document?

Insert a section break at the end of the text on page 2.
With the insertion pint on page 3, click the Document button, then choose Section.
Click to check the checkbox indicated by the arrow:

(My sample contained only the Page number in the header).
