I do not have the option to remove a family member from the Family Sharing on my phone settings, so please do not refer me to the article. I need possible reasons and troubleshooting for why this option is absent. Yes, I am the Organizer for my family.

You cannot do that if member is underage.
For adult members, they can remove themselves.
See Settings > [your name] > Family Sharing > tap the adult member you want to remove
