Unpair Apple Watch from Phone I No Longer Possess

I recently found the apple watch I lost 2 years ago. Id like to erase and give to my niece to pair with her iPhone, but I no longer have the iPhone that it was paired to. The watch says I have to remove the Activation Lock. How do I do this without the old phone?
