Every time I try and update it gets caught on this screen. Very frustrating.
Have tried updating it through Recovery Mode but that also failed because my bluetooth mouse and keyboard freeze, so cannot select the option to install Big Sur Mac OS.
Any bright ideas on how to get past this impasse?

I’d start by throwing it in the trash. The macOS Big Sur installer that is. Lol, why would you throw your computer in the trash. Anyway, then redownload the installer.
