I am looking to purchase a new MacBook Air M1. Is it worth the extra money to get the 512 GB ?

Yes, it is always worth having more storage.
Once a user buys a Mac notebook, it cannot be upgraded hardware wise.

One other thing, get the 512 GB model and not just add
more storage on the base model. The extra 50 bucks gets
you an 8 core GPU vs. a 7 core GPU which is important
if you intend on doing any graphics. plus it is generally
an "off the shelf: item rather than waiting for a special order.
(Actually, Best Buy has them in stock and on sale for $1199
instead of $1249 which would be the price of the base
upgraded to 512 GB).
"Stuff" accumulates to fill all available space.
Buy as much storage as you can afford. You can't increase it after purchase.
