Restore deleted text messages
How can I restore accidentally deleted text messages from one person without total restore

Without a restore? You can't.
And if you are syncing your messages in iCloud, a restore won't recover your messages anyways.
To check, go to Settings > [your name] > iCloud and see if the switch is turned on for Messages.
If the switch is ON, your messages are gone regardless of any backups you may have.
