We see that you're very sincere and happy with your iPhone 6 but some 3rd party apps may not support older iOS versions due to latest release dates of apps therefore either you should contact to app developer or purchase new iPhone. If possible in your regions go to Apple Store and try trade in and buy a device with discounted price.

no, apps are not contained in backups.. they are simply re-downloaded from the App Store.

AFAIK there is not a way to get an old version of the app
