How can I tell if someone else is in/hacked my iPhone 7?

sounds to me more like the screen being flakey.
Try a force restart, see if it helps.. if it persists maybe consider a repair

When I am typing something my phone automatically stops before I hit enter. It opens apps that I did not choose to open.
