Connecting to two monitors with HDMI Cable on new mac mini
Will i be able to connect to two monitors through HDMI? One would go from the HDMI outlet on the mac mini and the second would be a usb-4 to hdmi adapter. Would this work?

Yes you can connect one to the HDMI port and one to a USB-C (TB 4) port using a USB-C to HDMI adapter.
