My research so far:

And yes as neuroanatomist notes, there is always the possibility with 3rd-party drivers like DisplayLink will be broken by future OS updates, and I would assume the DisplayLink-attached external monitor would perform less well than the other external monitor for video content. And the current DisplayLink driver notes, if I'm interpreting them correctly, suggest the DisplayLink-attached monitor requires the MacBook Air be left open (i.e. not in clamshell mode): https://support.displaylink.com/knowledgebase/articles/1963276-clamshell-and-rotation-support-on-macos-big-sur-11
PS. I had hoped to hear from someone who at least has a working DisplayLink setup on their MacBook Air M1 OS 11.2.1, and could offer advice on which DisplayLink-certified USB-to-HDMI adapter they were using, but no response yet to my query: https://discussions.apple.com/thread/252413951

OK, so I already had this pluggable. https://plugable.com/products/ud-ultcdl
I have one monitor using the DVI port and one using the HDMI port and it plugs into one thunderbolt in the computer. I also installed Display Link and it is working. I'm not tech savvy, so I'm surprised this somehow worked for me.
A DisplayLink dock or adapter, as long as you don’t mind not having hardware acceleration and the potential for a macOS update to bork the drivers and having to wait a few weeks for an update.
