I signed up for Apple TV and then after a few months he got a new Ipad which had a free year of Apple TV included. How do I cancel my previous subscription so we aren't paying for something we already have?

All I can report is my personal experience. When Apple TV+ was released I purchased a one year subscription. Later, my wife bought me an iPad and I was offered the free one year trial. I applied, was accepted, and my subscription was extended another year. I now have two years of Apple TV+.
The offer is for new subscribers. As you had already subscribed, and received the standard trial, you would not be eligible. Cancelling your current subscription wouldn't change that.
As has been mentioned before, that is based on an exception but is not what the terms state and as such not what most have experienced.
