Seems like the column is wider than it should be...
I would suggest trying to resize it by holding & dragging the column to the left back to the way it was used to be.

Great idea; thanks! I woulda felt really dumb if that is what it was, since it's par for the kinds of mistakes I tend to make :(
But I don't see any column headers anywhere in the top bar to grab:

It may be helpful. When Activity Monitor is Open, Make it Full Screen ( Green Button ) Top Left of Activity Monitor. Then follow the very Good instructions of @ TwilightMirror
