I just downloaded MacOS 11.1 to my MacBook Pro. A lot of my work is writing in Pages, using Highlighting in various colors to identify different items in documents.
I cannot find how to change the highlight color.
Can anyone please help?

Pages uses the Advanced Options panel to provide the text background color, which any other word processing application would rightly call the highlight color. See the red box in the image below. Select your text, and choose a color either from the color well, or the color chooser (globe).
