How can you revert new Color scheme (desktop, menu bar, dock, and applications) or new look of Big Sur back to look of Catalina?
Already run into trouble with Adobe application being completely blacked out to where app was unusable after upgrading to Big Sur.
The Menu Bar Font changed from distinct Black to very hard to read White.

How else do you imagine you are going to get the Catalina color scheme? Every OS Apple makes has its own design. It doesn't keep old color schemes buried in the OS. There are no themes. You get what Apple has decided to provide.
If you must have the Catalina color scheme, you need to use Catalina.
You could erase your drive and restore from your Catalina backup.
Try enabling this option :)
Lessen transparency it translates as. Sorry, using the Dutch language on my Mac.
You can find it in System Preferences -> Accessibility Options - Display Settings :)
