I could see the battery percentage on my MacBook Air when I opened the lid. Since I installed Big Sur it doesn't show that anymore. Once I've entered my password I can see the battery percentage on my desktop.
The Big Sur interfaces have been redesigned from what you expected in prior operating systems. The battery percentage is only shown after you are signed into your account, and then only if you have configured it via System Preferences : Dock & Menu Bar : Battery : Show Battery Percentage.
