I want to switch to a different family sharing account

If your Apple ID is set to an age over 13, then you can simply leave your current family group, and accept the invitation to the other family group. See here: link-> Leave Family Sharing - Apple Support
Once you have left, have the Family Organizer of the new Family Group send you an invitation to join that family group.
Note, that you can only change Family groups once a year.
