Im thinking upgrade my SSD on my 15' Mac Book Pro 2017 A1707 model from 512Gb to 1Tb or more ?

Can I do it or I need to change my Mac ?

MacBook Pro 15″, macOS 10.15

No. The SSD is.soldered to the logic board and cannot be upgraded. You could consider an external drive, but if you need more onboard storage, you need a new Mac.
