Activating new iphone 11 data is not transferring from old 7s. OS is the right version, device is unlocked and there is plenty of space. Data has been transferring for several hours. Any suggestions beside driving to the nearest store which is almost 50 miles away?

What method are you using? There are a few options, like using iTunes/Finder on a PC or Mac, downloading from an iCloud backup or via iPhone migration.
SEE OPTIONS ON TRANSFERRING DATA FROM PREVIOUS IPHONE HERE.
Each method will take some time, usually using a computer can be quicker, as plugging the devices via USB can be faster if your WiFi network is taking too long.
My preferred method is using iCloud, because I already have an automatic backup setup.
If you don’t have iCloud, it will also take a long time to complete the backup and then some more time to download it.
