how do I store my documents on the hard drive I pages and not in icloud

When you initially select File menu : Save/Save As… you will likely be presented with a minimalist dialog that defaults to iCloud Drive. That panel can be expanded to a larger version by clicking the small arrow v adjacent to the folder selector. Once you have done that, you have a Finder-like view, and folder selection (e.g. Documents, Desktop, etc.) that allow you to save your document to your local hard drive. Pages always remembers the prior save location.

One way is to click the name of the document top center, and choose a different location in the dropdown.
