For Contacts, you can try -- If you accidentally deleted your calendars, bookmarks, or contacts from iCloud - Apple Support.
For Notes, you can try -- If you're missing notes on your iPhone, iPad, or iPod touch - Apple Support.
For Photos, did you already look in the Recently Deleted folder in Photos?
