I can’t remember the restrictions passcode I have set to restrict various things on my daughters device that’s in family sharing

Try this If you forgot your Screen Time passcode - Apple Support

no joy do this If you forgot the passcode on your iPhone, or your iPhone is disabled - Apple Support
