If we already have a plan with our phone with verizon and we decide to buy an apple watch from the apple website and get the one with GPS + Cellular, will we need to add that new apple watch to our verizon plan so the cellular data can work on the watch?

You have the choice of getting a GPS only Apple Watch, which will do Everything a Cellular model will do as long as your iPhone is nearby. You can do this with a cellular Apple Watch without a contact as well.
If you want to leave your iPhone at home and still get/make phone calls, message, access the internet, etc..., then you would get a cellular Apple Watch and have sign up to share your iPhone’s phone number. The cellular carrier must support this Sharing and for this service they charge a fee. In the U.S. the change $10 per month added to your iPhone monthly bill.
