How do I make sure that my subscriptions has been canceled?

Follow the steps here: See or cancel your subscriptions - Apple Support


If the subscription there says "Renews" or "Next Billing date" and a date, then it has not been cancelled. If it says "Expires" and a date, then its been cancelled and just waiting to expire.
