When erasing and reinstalling Catalina, do you erase "Macintosh HD - Data" followed by "Macintosh HD"?
And then do you reinstall Catalina on the single Macintosh HD?
When you just erase the Data drive, you are then given 2 drives to choose for reinstallation. That is when it gets confusing.
I assume erasing both as mentioned above and reinstalling on to the single "Macintosh HD" is the correct way?

In Disk Utility, set View (Top-Left of window) to "Show All Devices". Select the drive all the way at the left in the left column, not one of the indented volumes or partitions. Click the Erase button at the top of he window. Set the drive name. set Scheme to "GUID Partition Map", and Format to APFS for a SSD, or "Mac OS Extended (Journaled" for a hard drive, then Click Erase at bottom-right.

It only showed:
Macintosh HD
Macintosh HD - Data
I erased both and reinstalled on the single Macintosh HD - Seems to have worked, just migrating data before I am able to see that I have the above 2 drives again.
Just to close this off, it turns out that once Mac OS has been reinstalled Container disk 2 reverts back to being called Container disk 1. Apparently, it gets renamed like that when booting from Internet Recovery.

Did you set View (Top-Left of window) to "Show All Devices"? If not, you will see only the to volumes and If you continue the install you may get duplicates.

Apologies, so after doing that, erasing from the very top as directed, the "Container disk 1" automatically becomes a "Container disk 2" - Does that pose any problems?
