Can I use my apple watch series 4 that has cellular capabilities without paying for service every month? Will it be a GPS version basically?

I just want to make sure that when I switch to a carrier that I'm pretty sure doesn't really support apple watches that it will still connect to my iPhone via bluetooth. I don't need it to have cellular support for it to work with my iPhone correct?
