What happened to the pencil function in notes? It used to be able to draw like a lead pencil with shading functions and such. Now it just behaves like a marker with solid lines.
What model of iPad do you have - and what version of iOS/iPadOS is currently installed?

Yeah I've done all that, it just changes the aspects of the marker but it's still a marker. Can't do the same thing that a graphite pencil can before. I guess that feature is just gone now. This is why I don't like updating OS.
I do not use Apple Notes to sketch/draw/paint as I prefer much more robust, dedicated, sketching/drawing/painting apps, of which there are plenty of Apple Pencil compatible ones in the Apple iOS App Store.
That stated, in the Apple Notes app sketch/drawing feature, what does the Pencil tool to the right of the eraser do, in the tool selection bar/area?
It wasn't the most extensive, but it was very convenient. Currently I'm using Adobe but it has single fixed pages, unlike Notes where I could just endlessly scroll down for more space. What other apps would you recommend? The one between the eraser and ruler is a selector tool.
I'm not sure what the problem is. The pencil is still there and functions like a pencil with shading shown above. It's the third tool from the left, currently showing blue. The tool on the far left is the pen.
Have you tried a simple hard reset of your iPad by holding down both the Home and sleep/wake buttons simultaneously until your iPad goes to black and restarts with Apple logo, then release the buttons?

If you long-touch the selected pencil, pen or marker, you can choose the width and other properties of the respective marker.
