Trying to add an epson XP-630 Scanner Driver and EPSON Scan Utility v4.2.2.0 and for some reason my macOS Mojave won't complete launching this, it just disappears.

Make sure you have downloaded the most current driver(s) and software from the Epson support site:

Reboot and try the installation again.

Yes, here's one. Try resetting the printing system. Take a look at the last couple of sections in this support document.

Use safe mode to isolate issues - Apple Support
Restarting in Safe mode can often eliminate a problem or help identify the cause.
You can verify that you have started in Safe mode by clicking Apple menu > About This Mac > System Report. Then find >Software< in the left column and look at >Boot Mode: Safe vs Normal< in the right pane.
Note– starting up in Safe mode could take 10 minutes or more. Be patient.
After the safe boot has finished and you have logged in, shut down the computer and reboot again normally. Then try to reinstall the printer drivers once more.
Thank you again. I reset my printer. Still didn't work.
I am trying to start in Safe Mode, but for some reason it is not starting in safe mode. I followed the directions as to restart and hold down the shift key. Still booting up 'normal'.
I rebooted and tried to launch the scann, it quit and disappeared. I may call Apple Support Monday. I did talk with Epson Techs and they tried everything they could and suggested it is my Mac stopping the download.

Thank you DI Johnson. I did download the current drivers and rebooted however it didn't launch again. It starts 'launching' then the little screen disappears. Any other suggestions?
I finally figured out how to start in Safe Mode. Shutting down now and going to relog in.
Well I did it. I don't know how but retraced all of the steps and the scanner finally loaded and is working! Thank you again, DI Johnson! I really appreciate all of your help.
