My cell service provider is straight talk and I’m wanting to purchase a Apple Watch, will I be able to use it with my service? Like making calls and texts?

The Apple Watch GPS only can do Everything the cellular model can do as long as your iPhone is nearby, where nearby is somewhere in the same 3-4 bedroom home (assuming typical wood frame construction).

If for some reason you want a specific Apple Watch model that only comes with cellular (Titanium or Ceramic case, special band, etc...), you do not need to activate the cellular radio, and it will behave as if it was a GPS only model.
