I could see my stolen iPhone offline in find my iphone, now it doesn’t appear in the list of my devices. What happened? Can you help?
If the phone is not powered on and connected to a network, it's last known location will only appear for 24 hours. Since you can no longer see it, it means it's still off and not connected to a network.

Okay, but it still appeared as offline. I have old devices that haven’t been powered on for a while and I still have them as “offline”. This stolen one isn’t even on my list of devices. Is this normal or does it mean that the thieve has found a way of unblocking it?
Did you receive a text or email saying your phone had been found and to log in to your Apple ID using a link in the message? If so you gave the thief the information they needed to remove activation lock.
You can’t get it back. You can make some trouble for the thief by reporting it stolen to your carrier so it can be blacklisted. That will prevent its being usable with any carrier who honors the blacklist. While this includes all US and most EU carriers, the phone can still be sent to a country where the blacklist is not honored.
Is there a way to get this back knowing the iPhones serial number or something? I did get a suspicious message but it took me to the real iCloud web page...
Sadly, it did not take you to a real iCloud page. That was a scam and your phone is now hopelessly lost. You cannot track it by IMEI or Serial number. Chalk this one up to a total loss.
