I just got my new iMac 27, with Catalina pre-installed, and after using QuickTime player a few times already it suddenly decided to no longer start up.
It works fine on my other Mac, which still runs on Mojave.

I understand the QuickTime Player app is not launching on your iMac with macOS Catalina. What version of QuickTime Player do you have?
macOS 10.15.3 was released January 28, 2020. I would suggest quitting the QuickTime Player app, restarting your iMac, and installing the software update to help with this issue.
