If I do family sharing with my child would he be able to see my personal information like photos or messages downloaded to my personal iCloud?

If I create a family sharing with my young son would he be able to see any of my personal information that is on my iCloud like message or photos?

iPhone 11 Pro Max, iOS 13

No. They can only see photos that you put in a shared album and selected other things that you elect to share. More information in https://www.apple.com/family-sharing/

Not as long as you create/use a separate Apple ID for him.
