GPS only vs Cellular
The GPS only can do Everything the cellular can do as long as the iPhone is nearby, where nearby is say somewhere in the same 3-4 bedroom house (assuming typical wood frame constructions).
The Cellular model allows you to leave the iPhone at home while you go for a walk, run, bike ride, etc...
The Cellular model shares your iPhone's phone number, so you need to have an iPhone carrier that supports the Apple Watch.

That is the biggest thing to decide.
After that it is things like color, case material (aluminum, stainless steel, ceramic, titanium), watch band style.
If you want a case that only comes as a Cellular model, but do not want to activate the cellular, the Apple Watch will just behave as if it is a GPS only model.
