I email the help desk of the software company that I bought it through and they advised this below. Feel free since you seem to provide help to many people to use this to help others. This worked for me.

Thanks for your help though, it is much appreciated.

I believe this may be an issue listed on the following page... https://support.office.com/en-us/article/what-to-try-if-you-can-t-install-or-activate-office-for-mac-5efba2b4-b1e6-4e5f-bf3c-6ab945d03dea#bkmk_nolicensefound

With our experience we found the most common cause for this, and to avoid our customers having to read through and try many things from this guide, we provided the download directly. In most cases this resolves this issue. Please download and run this patch https://we.tl/t-Ql3z1S3oKv after that reopen your word or Restart your Mac and check again

We have also create a handy video which shows you to process of installing and running this patch at https://www.youtube.com/watch?v=fO5g6GfEHMo

I did buy the current version of MS office 2019 home and student but for some reason I cannot edit an existing excel document or create a new one as it doesnt give me the option to save, save as, save a copy nothing, these options are greyed out.

I was thinking that I did something wrong in the downloading process somehow.

One reason that those options may not be available is if your Office 2019 has not been activated.

I pay for Office via an Office 365 subscription so I don't have any recent experience installing and activating a one-time purchase but the following may help: https://support.office.com/en-us/article/activate-office-5bd38f38-db92-448b-a982-ad170b1e187e

If that isn't the problem or you need more help, you may want to go directly to the Microsoft forum for Mac products: https://answers.microsoft.com/en-us/msoffice/forum/mso_mac?sort=LastReplyDate&dir=Desc&tab=All&status=all&mod=&modAge=&advFil=&postedAfter=&postedBefore=&threadType=All&isFilterExpanded=false&page=1
