In certain text displayed on my screen, "x" and "y" characters are not appearing (see attached screen grab from an email. I highlighted the effected words). This is on a 2011 Mac Pro Tower running High Sierra.

is the deficiency in that email, so that if you type in textedit those characters DO appear? or is the issue system-wide?
If you change to a different font, do the characters appear? (maybe a specific font is damaged).
go to Applications > Font Book and do File > Restore Standard Fonts and restart.
what setting is in use for:
System preferences > Keyboard > Input Sources ...
in the left column, what is selected?
is this in all email or just from one particular sender?
Oh no. The text on lots of web sites displays this way, as well as some email text. Weird.
