I there any way of looking at your back up in Itunes? I have backed up my old Iphone 5s and would like to see the back up content..

You can view your backup with one of the many iPhone Backup Extractor programs available, but you can't edit it.
I believe that this is possible with a third party app. I really know very little about it, but you can check it out yourself.
