I have an old phone and a new phone at the moment. I backed up my old phone through iTunes and now have my new phone connected and clicked restore backup. I am wanting to know if this will automatically delete photos from my old phone or if they will now be visible on both my old and new phone?

They won't be deleted until you erase your previous phone.
Do not delete them manually, head to Settings > General > Reset > Erase All Content & Settings and it will wipe everything off.

No. Restoring the backup to your new phone does not delete anything at all on your old phone.
