Any ideas why Apple card is set up fine on iPhone but not displaying on Apple Watch?

I have the same problem and did contact support.
First you have to go through an Apple Card Specialist at Goldman Sachs who was no help. That person then passed took for ever to understand the simple issue and finally passed me on to an Apple tech support person. That person was not able to resolve the issue either.
FYI I had no issue adding the Apple Card as the default payment method for Apple Pay on my MacBook Pro.
The problem is that Apple Card requires watchOS 5 but the original Apple Watch cannot be upgraded to this release. Therefore Apple Card is not compatible with the original watch. VERY sad for me.
Did you try removing from your iPhone then adding it back again?
No, I have not but since creating the account can only be done in wallet on the phone I am concerned that if I remove it I may not be able to add it back. It is not like any other cc.
I have an Apple Watch 4 with watchOS 5.2 and it still is not working.
Confirm your iPhone IOS is The latest update 12.4. If not update it and try again. If that fails contact Apple Pay support
Confirmed, the latest and greatest is installed on my phone and watch!
